Loved by young and old alike, popsicles are perfect for cooling off in the summer months. Those with fruit represent the ideal snack that combines lightness and goodness. Often, however, those bought at the supermarket are full of dyes, preservatives and added sugars. So why not prepare them at home with fresh and genuine ingredients? The recipe for the popsicles that we propose includes two ingredients easily available in the summer and with a high refreshing power: the Lemon; and elderberry flowers. The recipe for popsicles with elderflower and lemon 

That of elderflower and lemon is a truly compelling combination against the summer heat. This delicious recipe was invented by the English herbalist Brigit Anna McNeill, who decided to publish it on her Facebook profile:

Ingredients 

To prepare 6 popsicles you need the following ingredients:

  • 1 popsicle mold
  • 2 lemons (preferably organic)
  • 2 bouquets of elderberry flowers
  • a handful of lemon balm leaves 
  • a handful of lemon verbena leaves 
  • 4/6 tablespoons of maple syrup
  • 1 glass jar or a teapot
  • Half a liter of boiling water

Preparation 

Squeeze the two lemons (also chopping the pulp) and place all the ingredients in a glass jar or teapot. Add half a liter of boiling water and leave to infuse for 5 hours or overnight. Now you just have to filter and pour the liquid with the intoxicating scent into the molds and place them in the freezer for a few hours. 

Of course, the amount of flowers to use is to your liking. But the more you use, the more your popsicles will look good. If you don't have lemon balm and verbena leaves available, don't worry. They will come equally delicious. As an alternative to maple syrup, you can opt for a little honey, sugar (even better if cane) or stevia.
