Ingredients

  • 50 gr of breadcrumbs
  • 50 gr of grated parmesan

Method

Wash the aubergines e cut them into slices.

Line a baking sheet with parchment paper and place the aubergine slices on top.

Now prepare the mixture to put on top of the aubergines.

Chop the parsley and cutfinely the cherry tomatoes. Peel and mash the garlic.

Mix together: parsley, tomatoes, garlic, grated cheese, breadcrumbs and the remaining oil.

Remove the garlic and sprinkle the eggplant slices with the mixture. Salt and pepper.

Turn on the oven at 200 ° C. When the temperature is reached, put the pan in the oven and cook for 20 minutes.
